Who doesn’t love holiday treats? It’s not always the healthiest time of the year, but it’s so much fun! There are dinners, parties, cookie exchanges always something delicious to tempt you. While my favorite desserts are classic cheesecake and good ol’ chocolate chip cookies, during the holidays I like to add a little festive twist. My husband loves anything chocolate and chocolate mint even more. So I always try to doctor up my holiday treats! Here’s my recipe for Peppermint Mocha Brownies I adapted from a brownie recipe at Land O Lakes.com.
6 Tablespoons Butter 2/3 Cup Sugar 1/3 Cup Unsweetened Cocoa 1 Slightly Beaten Egg 1 Teaspoon Vanilla 1/4 Teaspoon Baking Soda 1/4 Teaspoon Baking Powder 3/4 All Purpose Flour 1/2 Cup Peppermint Mocha International Delight Creamer 1 Cup (7oz) 3/4 bag Mint Chocolate Chips (use half in the brownie mixture and sprinkle other half on top. Or you want a red and white color combo can use all the chocolate chips in the mixture and sprinkle crushed red and white peppermint candies on top.
Spread batter into greased 9-inch square baking pan. Then sprinkle with mint chocolate chips. Bake for 22 to 25 minutes or until toothpick inserted in center comes out clean. Cool completely.
